FOR THE SWEET POTATOES:
- black beans
- cherry tomatoes
- spring onion
- onion powder
- chili flakes
- pepper and salt
- Roast as many sweet potatoes as you want on 200 degrees Celsius for 45-50 minutes, checking in 10-15 minute intervals.
- Stuff with what ever you wish. I used black beans, corn, cherry tomatoes, spring onion and parsley.
- Soak 1/2 cup of cashews for 10 minutes.
- Remove the water and add into food processor.
- Then add 2 tsp onion powder, 2tsp basil, a sprinkle or two of chilli flakes, a few grinds of pepper and salt.
- Add a little water to blend better. Or make up your own sauce and add whatever herbs and spices you wish.
